How I Started Making These Italian Roasted Potatoes

3. Don’t overcrowd the pan

Place the sliced potatoes on a clean towel or paper towel.
While they’re drying, press and pat them thoroughly. Make sure every surface of the potatoes is completely dry.
If you want crispy potatoes, don’t skip this step.

Step 3: Preheat the Oven and Pan

Preheat your oven to 425°F (220°C).

Pour olive oil onto a baking sheet. Place the baking sheet in the oven and heat the oil for about 10 minutes, until the oil is hot.

Step 4: Add the Potatoes and Seasonings

Slowly remove the hot baking sheet from the oven.
Be careful when adding the potatoes. Hot oil may splatter. Keep your hands and face away from the pan when adding the potatoes.

Toss the potatoes gently and quickly so that the oil and spices coat them well.

Spread the potatoes in a single layer. Arrange the pieces so that their flat, cut sides are firmly pressed against the hot pan. Leave a little space between the pieces.

Step 6: Roast Until Golden and Tender

Roast for about 25 minutes.

Flip the potatoes so the browned sides are facing up. Then roast for another 20 minutes. You’ll know they’re done when they’re deep golden and a fork slides in easily.
Cooking time will depend on the size of the potatoes and your oven. So feel free to adjust the time slightly as needed.

Visual test: the potatoes should have deep golden-brown edges, and a fork should slide easily into the center.

Step 7: Finish and Serve

Season with salt to taste.
If you roasted the garlic whole, squeeze out the soft cloves and mix them with the potatoes.
While the potatoes are still hot, sprinkle with a little chopped fresh rosemary, parsley, and Parmesan, if desired.

However, for a crispier exterior, you can parboil the potatoes first.

Give the drained potatoes a gentle toss in the colander. This will rough up the edges slightly. Those rough edges will turn crispy once they’re in the oven.

Which method should you choose?

For maximum crispiness: Parboil first, then roast.

You don’t need to parboil every time.

Here’s how to choose the best form:

This has been the best choice for roasting with potatoes from the very beginning.

Lightly crush the garlic cloves, but leave them whole. They roast slowly, becoming soft and sweet.

Minced Garlic

On the other hand, minced garlic has a more intense, pungent flavor. However, it can burn very quickly.

If using minced garlic, add it during the last 10 to 15 minutes of roasting.

Garlic Powder

Garlic powder is an easy option when you want even garlic flavor without worrying about burnt pieces.
